We're changing things up a bit this week again. As a writer, I often find that there are just not enough hours in a day. I think this is a problem most women can relate to. However, the family stills needs to be fed. So, this week, we are going to share some of those super quick recipe ideas that get dinner on the table fast and with minimum fuss.
We are a big pizza family and I came across this on in the BBC GOOD FOOD magazine. You can add other toppings, but this is a healthier alternative and my girls love this one.
Readymade Feta and Red Onion 'Pizza'
2 x pre made Pizza bases (you can pick these up in any supermarket, they are pre baked and ready to heat)
I add some pancetta or bacon for a bit of extra yum.
Preheat the over to 410.
Fry the onion in butter until it is opaque and lightly golden, adding a teaspoon of sugar just before they are done to caramelize them. Brush the bases with olive oil. Spread the cooked onion evenly over the bases, sprinkle over the feta and then add the rosemary. Bake for about 15 minutes, until the feta is slightly colored.
Quantities are really up to you and your family's preferences. Some like more onion or feta. I have even mixed a bit of parmesan with that feta once and it was delicious. If you are using bacon/pancetta, just remember to cook it first.
Serve with a fresh green salad.
And another quick. 'go to' is baked Salmon with Pesto.
Heat over to 350.
Take a salmon fillet and spread pre made pesto on the top, wrap in foil and bake for 15 minutes or until salmon is ready. Serve with green beans/salad - whatever you fancy.
